Recipe 2-Soul Mac & Cheese

This week I decided to make something my daughter loves- Mac & Cheese- we are no stranger to the boxed kind or the kind that you "make" yourself with velvetta cheese-
My sister passed on this recipe for us to try- her mother-inlaw make this often and eveyone- loves it , so I though I would give it a try- with my twist on it!

Soul Mac & Cheese

1/2-1c. Milk (skim)
1/4c butter (I used the real thing)
1/2c sour cream (fat free- of course!)
2c cheddar cheese-(any of your favorite cheese mixture will be fine too)
1 egg beaten
16 oz. macroni noodles (just undercooked)
Salt, Pepper, Garlic Powder, & Paprika ( to your liking)

Melt the first 4 ingredients together - add a tiny bit of the hot mixture to the egg and continue to beat till the egg is tempered and continue to add hot liquid till all combined,add spices- once combined mix with the cooked noodles-mixture should be a bit soupy- cover with 1c. more of cheese- I topped my with bread crumbs as well- bake at 350* covered until bubbly- about 45 minutes- Enjoy!!!

Dinner was a hit!!! Eveyone LOVED the mac and cheese- my daughter even told me- no more new recipes for this week mom this was , and I repeat (with joy)  AWESOME!!!!

Recipe 1----Yuck!!!

Thai Curried Tilapia Skillet was a bust in our house!!! At least I can say I tried and so did everyone else-now don't get me wrong they are used to nasty tasting food but this was something that we all like the ingredients of-so I was sure we would desire the taste- WRONG!!!

That is okay though- I will keep on trying and they will keep tasting-and soon we will get it figured out- TOGETHER!!!

Happy New Year- a bit late!

Hello , I am Jen and this is my blog-Enjoy and give me feedback it will be a fun journey for me and hopfully we will all learn something in the process!

So it is the year 2011 and I have decided to try something new- everyone knows I am not a fan of cooking- so therefore I don't try hard to be good at it. However this year is going to be different-I have challenged myself to try 52 new recipes for the year- one a week and see what my family thinks of them-
